Two CERASUM Cocktails

By: The Food Hunter

CERASUM is a bitter cherry aperitivo based on a traditional Italian recipe from the DON CICCIO & FIGLI distillery in Amalfi Italy. Today, the recipe is being made stateside by fourth generation family owner Francesco Amode. This naturally tart spirit is an infusion of three types of cherries from Michigan, sakura blossoms from Virginia and 10 selected roots and herbs including Juniper, Chamomile, Hibiscus.

To better understand and get a taste for the complex blend of flavors in Cerasum, I recommend trying it in one of the classic cocktails below before moving on to something more complex.

CERASUM Manhattan
2 oz Rye
1 oz Vermouth
1/2 oz CERASUM
2 dashes bitters

Stir together all of the ingredients with ice in a mixing glass. Strain into cocktail glass.

CERASUM Old Fashioned
1 tsp powdered sugar
3 dashes bitters
2 oz Bourbon
1/2 oz CERASUM
Orange slice

Add sugar and bitters to a rocks glass and stir until sugar is dissolved. Add Bourbon, CERASUM pour over ice and stir.

  1. This is the cocktail I have never tried in my life. But I think that it should be so cool, as the recipe is quick and contains nice and harmful ingredients.

  2. Probably each of us has tried similar cocktails, but this will allow us to understand the difference and taste of the new ingredient that you described.
