Sicilian Style Tuna Carpaccio & Duca di Salaparuta Kados Wine

The silky, smooth texture of fresh tuna is perfect for carpaccio. The traditional Sicilian recipe below makes a wonderful starter course or a delicious light lunch. Pair it with wine from the hills of Western Sicily; like the Duca di Salaparuta Kados . This wine is made from Grillo, a native white grape with lovely floral & citrus notes.  The combination of fresh tuna and grillo grape will make your mouth water.




Sicilian Style Tuna Carpaccio

½ lb fresh tuna, thinly sliced
2-3 tablespoons fresh squeezed lemon juice
Extra Virgin Olive Oil
2 celery hearts, sliced thin
3 oz pitted kalamata olives, thinly sliced
4 basil leaves, sliced thin

Arrange the thinly sliced tuna on a plate. Season with slat & pepper and top with some lemon juice and a drizzle of olive oil. Let this marinate for 5 or 10 minutes.

In the meantime, combine sliced olives with celery and basil. Mix with olive oil and toss to coat.

Top the tuna with the celery salad and serve.
