Stuffed Italian Meatballs

I'm Italian, which means meatballs are a pretty common occurrence at our house. Though, more often than not I make my grandmother's recipe, sometimes I like to switch things up a bit. Most recently I made these mozzarella stuffed meatballs that were to die for. Imagine the surprise on your guests' face when they bite into a meatball and it oozes with cheese. These meatballs may not be something you make on a regular basis but they are certainly worth trying at least once.



Stuffed Italian Meatballs

2 slices white bread
1/2 cup whole milk
1 large egg
1 pound ground beef
1 teaspoon fresh parsley, minced
1 teaspoon fresh basil, minced
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon red pepper flakes
1 package fresh bocconcino mozzarella

Preheat oven to 400 degrees.

Soak bread in milk until completely wet. Squeeze excess. Mix together all ingredients except the mozzarella. Form into balls. Insert cheese ball into the center of each ball and seal meat around it.

Place the meatballs on a baking sheet and bake about 30 minutes. In the meantime prepare your favorite marinara sauce. When meatballs are done baking add them to the marinara and toss to coat.
Keep warm and serve when ready.
