Parmesan Roasted Chickpeas

It's no secret that I like to indulge in a cocktail from time to time; and quite honestly in between sips I like to nibble on savory, salty snacks. Nothing over the top when it comes to nibblers; I like to keep them small, tasty and somewhat healthy. Pretzels and nuts are both good options but I prefer roasted chickpeas. These versatile legumes have a mild nutty flavor that can easily be enhanced with both sweet or savory seasonings depending on your mood.

In the past I've made them spicy with chili powder and paprika this time I seasoned them with fresh garlic and Parmesan cheese. They were full of flavor and paired perfectly with my cocktail!



Garlic Parmesan Roasted Chickpeas
1 Can Chickpeas, Rinsed & Dried
2 Tbsp. grated Parmesan cheese
1 clove garlic, minced
Olive oil
Salt & pepper

Preheat the oven to 400 degrees F.

Make a paste with the Parmesan, minced garlic and olive oil, using the back of your fork. Toss the chickpeas with the paste until evenly coated. Arrange on a baking sheet in a single layer. Place the sheet into the preheated oven and bake for 30-40 minutes or until the chickpeas are crisp.

Remove from the oven and serve when ready.

  6. I adore chick peas but have never roasted them. I think parmesan and garlic are the perfect combination and I can't wait to make this!!!
