Instead of offering the same old side dishes at your next BBQ, try something new this season like this refreshing Apple & Zucchini Slaw. Julienne cut apples and zucchini dressed in a light citrus vinaigrette pair well together and offer a nice healthy alternative to the more traditional mayo laden salads everyone else will be serving. Trust me after one bite this slaw will become a new BBQ favorite.
Apple & Zucchini Slaw

For the slaw:
1/2 cup apple julienne cut (your preference)
1/2 cup zucchini julienne cut
For the vinaigrette:
2 tbsp olive oil
1 tbsp red wine vinegar
1 tbsp sherry vinegar (or substitute red wine vinegar)
1 tbsp dijon mustard
2 tbsp fresh lemon juice
salt and pepper, to taste
Toss together the apple and zucchini in a bowl and set aside.
Whisk the vinaigrette ingredients until combined. Adjust to taste. Slowly add to slaw until you achieve the consistency you like. Mix to coat. Serve immediately or refrigerate until cold.
Never used apple in slaw and now i must!

ReplyDeleteThe reason I usually stay away from slaws and cold salads is because I loathe mayo. This is such a great alternative. I never would have thought to pair zucchini and apple. Love it!
