A fresh salad is one of my favorite things to eat when the weather heats up. They are an effortless way to get a healthy dinner on the table in a cinch. This particular summer salad is combination of juicy Tuscan melon and crunchy snap peas paired with bites of fresh mozzarella. The dressing is minimal: a drizzle of extra virgin olive oil, a pinch of salt and some chopped mint or basil.
The taste is incredible but don't take my word for it....give it a try today!
Tuscan Melon, Sugar Snap Peas and Mozzarella Salad
- 1 small Tuscan melon
- 8 oz sugar snap peas, strings removed, thinly sliced on a diagonal
- 3 tbsp chopped fresh basil or mint
- Extra-virgin olive oil,
- 8 oz fresh mozzarella, chopped
Mix the salad ingredients. Drizzle with the best olive oil you have and season with salt and black pepper.
