Apple & Cashew Chicken Salad

For those that know me, it should come as no surprise that I don't typically buy food at Walmart. But when I'm there shopping for household products, it's good that they now offer a wide variety of organic items.

Most importantly the Walmart near me now offers an assortment of Stonyfield products; everything from their plain Greek, which I prefer, to their Smooth & Creamy and even items from their YoKids collection. When I'm out and about it's reassuring to know that a healthy organic snack option, like Stonyfield, is readily available.

I recently picked up some Stonyfield Whole Milk Greek Yogurt to use in this lightened-up version of my favorite Apple Cashew Chicken Salad. By substituting half of the mayonnaise, in the original recipe, with Greek yogurt you get less calories without skimping on flavor.



Apple & Cashew Chicken Salad


1 lb cooked chicken, shredded
salt and freshly ground pepper
1/4 cup Stonyfield Greek yogurt 
1/4 cup mayonnaise
1 teaspoon garlic powder
1/2 teaspoon Dijon mustard
1/2 cup finely diced celery, plus 1/4 cup chopped celery leaves
1 tablespoon chopped parsley
1 apple, peeled and finely diced
1/4 cup cashews, chopped & roasted

In a mixing bowl, combine the yogurt, mayonnaise, garlic powder, Dijon, celery, celery leaves, and parsley. Mix well to combine. 

Add chicken, apples & cashews to the yogurt mixture and stir to combine. Season with salt and pepper to taste.

  1. I love this salad! I will have to prepare it and include it into my diet. Cashews seems like a great addition to it!

  2. Love this! Chicken salad is one of my favorites! Mama used to make a special salad for the ladies of the church when they got together. It had grapes and walnuts. She called it "Women's Chicken Salad" when she added fruit and nuts. Thanks for the memory!
