Healthier Nutella Blondies for #RecipeMakeover

If you follow me on social (which I hope you do) you know I am a strong proponent of healthy eating. So, when I was offered a chance to take part in #RecipeMakeover I was beyond excited. This is my opportunity to lighten up a favorite recipe and share it with all of you.

One of our #RecipeMakeover sponsors is Barleans, a family owned company selling all natural good for you items. I've worked with Barleans in the past and love the quality of their products and their commitment as a company to innovation.

One of the items I received was the Butter Flavored Coconut Oil, which has all the benefits of traditional coconut oil along with the rich taste of butter. I used it along with some almond flour to make a healthier version of Nutella Blondies.


Healthier Nutella Blondies

1/2 cup Braleens Butter Flavored Coconut Oil
3/4 cup brown sugar
2 eggs
2 teaspoons vanilla
1 3/4 cup almond flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped pecans (optional)
2-3 tablespoons warmed Nutella

Preheat the oven to 350F. Lightly grease a 8x8 baking pan.

In the bowl of a stand mixer, add the coconut oil, vanilla and brown sugar. Add the eggs and mix on high until light and fluffy, about 3 minutes.

Add the almond flour, baking powder, and salt and mix thoroughly. Stir in the chopped pecans.

Pour the batter into the baking dish. Smooth into an even layer and top with Nutella. Swirl the Nutella with your spatula so that it covers the top in ribbons. Bake for 25 minutes. Remove from oven and allow to cool before slicing.

  14. Look and sound SO good! Thanks for sharing. I have never heard of "Braleens Butter Flavored Coconut Oil" If I can't find it, can I use my regular organic coconut oil? In that case.. would you suggest another ingredient to add? TIA!

  16. Nutella is my weakness...I can't keep it in the house or I just keep eating it by the spoonful! But these blondies sound INCREDIBLE!!! And butter flavored coconut oil? Definitely checking that product out!
