Chicken Parm Bites

It's almost Superbowl time and here in Arizona things are getting crazy. Even though I'm not a football fan...there I said it...game day is synonymous with snack day at our house. And having the perfect bite to eat can be just as important as who wins the game, at least for me.

This year if you're looking for something a little healthier to add to your game day line up try this crowd pleasing finger food. Bite size pieces of chicken lightly breaded and fried topped with fresh tomato and melting mozzarella make a delicious appetizer to serve even the most discerning fans.



Chicken Parmesan Bites
(printable recipe)

1 pound boneless, skinless chicken breasts, cut 2X2 pieces
2/3 cup fresh breadcrumbs
1/4 cup Parmesan cheese, freshly grated
1-2 teaspoon, dried oregano
olive oil(for frying)
1 egg slightly beaten
Salt and freshly ground black pepper
Mozzarella cheese
1-2 tomatoes sliced

Mix breadcrumbs, Parmesan, oregano and salt & pepper in a small bowl. Place egg in a separate bowl. Dip chicken pieces into egg wash and roll in breadcrumb until well coated. Shake off excess.

Fry or bake chicken. I prefer it fried in olive oil.

To Assemble
Top each chicken bite with 1 slice of tomato. Salt & Pepper tomato to taste. Cover with mozzarella cheese. Place on a pan and broil on high until cheese begins to brown and melt.
