It's official: I hate eating alone! My husband goes out of town a lot and when he does I have a really hard time cooking for myself. I will just throw together something quick, easy and not very good for me; usually a grilled cheese. With no-one around to share the cooking and cleaning do you blame me for taking the easy way out?
I know this is a habit I need to break from so during his last out of town trip I decided I was making myself a dinner...something healthy and delicious. So I grilled up some chicken, made a little avocado & tomato salad and viola...dinner for one with leftovers for lunch!
Tomato & Avocado Topped Chicken

1 small firm-ripe avocado, diced
1 tomatoes, chopped
1/4 cup packed fresh parsley leaves, chopped
1 tbsp freshly squeezed lemon juice
1/4 tsp freshly cracked black pepper
2 tbsp olive oil (more for cooking)
2 boneless skinless chicken beasts
1. In a medium bowl, combine avocado, tomatoes, and basil. Season with salt and pepper and toss with lemon juice and olive oil.
2. In a large skillet, heat some oil over medium-ugh heat. Add chicken and cook, turning once, for 5 to 6 minutes per sir or until an instant-read thermometer inserted in the thickest part f the breast registers 165 F. Top with tomato & avocado salad and serve.
I have all these ingredients here in the house and can totally whip this up for dinner tonight...just add some brown rice and the kids will love it also :) Great idea
ReplyDeleteGreat recipe Theresa. Great site as well. We made your recipe last night with some brown rice and a side salad and there was much rejoicing! I'm a grilling addict so I'm going to now take your exact recipe and modify the cooking part by grilling instead of in the skillet.
