Sauteed Zucchini & Tomatoes with Parmesan

This time of year there always seems to be an abundance of tomatoes and zucchini everywhere you turn.  Simply sauteing the two together with some fresh basil and topping with grated Parmesan cheese makes for a tasty side dish.  Add some grilled chicken and you can have a light healthy meal on your table in minutes.




Sauteed Zucchini & Tomatoes with Parmesan
3 Tbs. extra-virgin olive oil
1 zucchini, trimmed and cut into 1⁄2-inch rounds
1-2  ripe tomatoes, seeded and diced
Handful fresh basil, chopped


In a large fry pan over medium-high heat, warm the olive oil.  Add the zucchini and cook, stirring, until the zucchini begin to soften, 5 to 8 minutes.

Add the tomatoes and saute a few minutes. Add the basil.   Top with Parmesan cheese and stir until starting to melt
