Sauteed Zucchini & Tomatoes with Parmesan
3 Tbs. extra-virgin olive oil
1 zucchini, trimmed and cut into 1⁄2-inch rounds
1-2 ripe tomatoes, seeded and diced
Handful fresh basil, chopped
In a large fry pan over medium-high heat, warm the olive
oil. Add the zucchini and cook, stirring, until the zucchini begin to
soften, 5 to 8 minutes.
Add the tomatoes and saute a few minutes. Add the
basil. Top with Parmesan cheese and stir until starting to melt
