Chicken Parmesan with a Twist

I like chicken parm just as much as the next person; maybe even more. But when my husband asked me to make it for dinner last night I couldn't help but add my own little twist.

I breaded and fried the chicken cutlets as I normally would. Then in order to get some veggies in I added a layer of fresh baby spinach. I prefer the sweetness of baby spinach over regular spinach.



I topped it with tomato sauce, AKA, "gravy" and for more of a twist I melted Fontina cheese over the spinach; instead of the traditional mozzarella. Fontina is one of my favorite Italian cheeses. I just love the slight nutty flavor.

Enough breaking away from tradition; it just wouldn't be chicken parm to me without a side of spaghetti.

  3. Theresa I love Fontina too.. I very rarely use mozzarella unless it is a smoked or an aged specialty. And your twist.. molto Buon! :) I'm sure you made your hubby happy!
    Hope your well and enjoying spring before the heat sets in! It gets pretty hot here in Temecula during the summer too.

  6. The spinach and cheese additions look great! I prefer baby spinach as well and have never been able to pinpoint why bu perhaps it is the sweet factor.

  7. I'm glad you stopped by my blog, thank you. We share the same views on slow eating, local foods and healthy ingredients. I proudly boycott supermarkets, but I guess living in a city where neighborhood farmer's markets, butchers, bakers and fishmongers are a given, it's easier.
